CRANBERRY PECAN CHICKEN SALAD


Bean Pot Cranberry Pecan Chicken Salad (Cold)
Refrigerate bean pot to get it cold so you can use it to serve the chicken salad in~
 
 3 cups cooked, diced chicken - could cook chicken breasts in the bean pot
 1 cup mayonnaise (Hellman's low fat)
 3/4 cup chopped celery
 3/4 cup chopped pecans
 1/2 cup dried, sweetened cranberries, such as Craisins
 1/8 t salt
 1/8 t pepper
 Combine all ingredients, mix well, a store in your favorite Bean Pot and serve. If you have time, refrigerate for an hour to allow flavors to combine....... we LOVE chicken salad on a croissant - so yummy! Great to transport in your beanpot which when refrigerated will keep your chicken salad cold for up to 3 hrs while serving!!
